The traditional beet salad is a staple of every dinner table for every kind of occasion. If you are hosting New Years Christmas or Birthday dinner parties in Eastern Europe, I can pretty much bet you a good sum of money that beet salad WILL be on that table.
I’m sharing my heritage recipe with you today, and guys, it’s a keeper. And how about those CUTE little helpers I have!!??
Ingredients
- 2 medium beets
- 2 medium potatoes
- 1 carrot
- 1/2 red onion
- 1 large pickle
- 1 tbsp mayonaise
- Salt (to taste)
Instructions
- Boil beets, potatoes and carrots until soft. (beets take about an hour)
- Peel the vegetables
- Finely dice up all the ingredients, make sure everything is approximately the same size.
- Dress up with mayo and salt to taste.
