Hi everyone and Happy Easter,
Hope everyone had a wonderful weekend! Ours was full of sunshine (FINALLY), family, and delicious food… oh and chocolate of course.
We had a small get together on Sunday. The kids played in the yard, gathered eggs (and ingested a GIANT chocolate bunny and were totally sugar high) and then sat down for a late lunch.
I love setting up the table and making yummy eats. This time around I went for simple and bright. I filled the mason jars with some branches from the trees in the yard and the red tulips were from my sister-in-law.
This lil bunny helped set up (NOT)
Here are some amazing eats that were on our table, I’ve linked all the recipes that I’ve blogged about and there are a few that I haven’t had the time to publish (but I promise I will get on that).
First and foremost there was turkey. I’ve never made a turkey before but we got one for free so it seemed like fate.
It was a bit of work to manhandle the beast alone but it turned out pretty good. I made a rub (mayo, rosemary, thyme, oregano, salt, pepper, paprika) and smothered it all over, stuffed it with diced apples, and jammed some butter under the skin for that crispy and juicy finish. And surprisingly the 15 lb. bird took only 3 hours to bake at 450.
This amazing salad creation which contained greens apples, tomatoes, avocado, feta, and finished with balsamic and olive oil was created by my sister-in-law (who got the recipe from her own sister-in-law, haha).
I of course couldn’t forgo the mushroom caps, read recipe HERE.
Spicy Carrot Slaw. Recipe coming to the blog VERY soon. It’s a staple at all our dinners.
Yummy beats, I was going to go for the beat salad (recipe HERE) but I was low on time so I just whipped it up. (beets, garlic, and mayo) and it’s so so good.
Creamy mashed (can’t live without my potatoes)
And some relish greek salad!!
For dessert we had some easter bread and cottage cheese cake that my mamma made, YUMM!
I was so happy that we went for a late lunch instead of a dinner. To be honest I think we have learned the bad way that dinners and kids just do not mix. Someone is always cranky and tired or crazy and hopped up on sugar and PARTY VIBES. So it’s nice to kind of get it out of the way, get cleaned up, and get everyone at the table and then relax and just enjoy the company!
Today, we are all just relaxing and having a turkey/chocolate bunny hangover š
Hope you had a good one my friends š

LOVE!!! thank you for posting your recipes. I also just adore the tables you set. The blue and white dishes with all the greenery and the pop of orange color from the tulips and carrot salad, well..goodness, it is just perfection! and so practical too, using mason jars and greenery from your yard.
Happy Easter to you and all of yours xxoo oh and that ‘helpful’ little bunny on the table was too cute for words!
